LAMPANG: A culinary fusion is taking place at Nori Sushi Restaurant in the Aswin Market zone of Lampang Municipality, where 'Hang Lay Curry Noodles' are being served in a Japanese style. 'Safe A', or Mr. Suwit Apakat, the restaurant's owner, has ingeniously adapted the traditional Hang Lay Curry, a local delicacy of Lampang Province, into a Japanese fusion dish. The innovative dish features white soba noodles paired with Lampang's iconic 'wet noodles', topped with Hang Lay Curry, and complemented with fried tempura shrimp and shrimp eggs. According to Thai News Agency, Hang Lay Curry has been recognized as the best local dish of Lampang Province, in a nod to preserving local culinary traditions. Nori Sushi Restaurant enhances the dining experience by incorporating a Japanese ambiance, with both the exterior and interior reflecting Japanese elements. Customers can also don Japanese attire available for both children and adults, adding to the authentic experience. Additionally, the restaurant offers another u nique dish, 'Grilled Catfish on Rice with Japanese Sauce'. This dish features crispy, fragrant catfish, offering an economical alternative to imported eel. Safe A mentioned that the taste of the catfish is favorable, lacking the typical eel aroma, and highlights its status as a local freshwater fish.
